Raisin Herb Spread

Ingredients
- 1 small onion
- 1 teaspoon minced garlic
- 1 tablespoon olive oil
- 1⁄2 cup water
- 3⁄4 cup golden raisin
- 1⁄4 cup chopped sun-dried tomato packed in oil
- 2 tablespoons apple cider vinegar
- 1⁄2 teaspoon dried rosemary
Directions
- Chop onion.
- Saute onion and garlic in oil until soft.
- Add water and remaining ingredients.
- Bring to a boil, reduce heat and simmer until liquid is reduced and raisins are soft, about 7 minutes.
- Puree one half of the spread in a food processor, transfer to a small bowl, and combine with unpureed spread.
