Directions

  1. Combine flour, sugar, baking powder, cinnamon and ginger.
  2. Stir carrots, raisins and nuts.
  3. Separately combine undrained pineapple, eggs, butter and vanilla.
  4. Stir into dry ingredients, until just blended.
  5. Spoon into sprayed or greased muffin tin.
  6. Bake in 375° oven 20-30 minutes.
  7. Turn out onto rack to cool.
