Radish Salad

Serves: 4
Ingredients
- 1 cup red radish
- 1 cup daikon radish (white radishes)
- 1 cup cucumber
- 1 cup onion
- 2 cups cherry tomatoes
- 2 tablespoons parsley (diced thin)
- 1⁄2 cup balsamic vinegar (MUST be basalmic)
- 3 tablespoons olive oil
Directions
- Chop the first four ingredients to your liking, and mix well.
- Cut the tomatoes into quarters and add to radish mix, along with parsely.
- Mix vinegar and olive oil, and pour over the top of the salad and toss. I like to let it marinate for at least an hour before serving but it's also good straight out.
