Quinoa With Peas and Cashews

Yields: 3-4 cups
Ingredients
- 1⁄2 cup quinoa, rinsed
- 1 cup vegetable broth
- 2 cups peas, steamed
- 1 cup raw chopped cashews, toasted
- 5 tablespoons soy butter
- 1 small onion, chopped approx 3/4-1 cup
- 1 tablespoon dried tarragon
Directions
- 1. Cook quinoa with vegetable broth in a small saucepan by bringing to a boil then simmering until all the liquid is absorbed-about 15 minutes. It will have cute little tails.
- 2. If you're a multi-tasker, while quinoa is cooking, heat butter, add onions and tarragon and saute a few minutes until onions are translucent.
- 3. Add in cashews and peas and turn off heat.
- 4. Mix butter mixture with quinoa and serve.
