Quinoa Fried Rice

A delicious take on the traditional fried rice.

  1. In a non-stick wok, spray the oil and add the eggs and pepper and scramble for a couple of minutes or until done, then set aside.
  2. Spray a bit more oil, then add the onions, scallions and garlic and sauté about 2 minutes.
  3. Add the peppers, carrots, snap peas, corn, peas and sauté until the vegetables are tender (approx. 5 minutes).
  4. Stir in the cooked quinoa, sesame oil and soy sauce and mix for several minutes.
  5. Add the scrambled eggs and adjust the if needed to taste, stirring for another minute.
  6. Serve with protein of choice.
