Quinoa, Feta & Spinach Salad

Ingredients
- 7 ounces quinoa
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 garlic clove, crushed
- 2 teaspoons ground cumin
- 1 pinch salt and pepper
- 7 ounces feta cheese, crumbled
- 1⁄2 cucumber, chopped
- 5 ounces spinach, roughly chopped
- 4 scallions, shredded
Directions
- Cook the quinoa according to pack instructions.
- Drain well then toss with the oil, vinegar, garlic and cumin while still warm and season.
- Toss through the rest of the ingredients and serve.
