Quinoa Beef Minestrone Soup

Ingredients
- 1⁄2 lb beef, cut in thin strips
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 2 cups frozen mixed vegetables
- 8 ounces tomato sauce
- 1⁄4 cup quinoa
- 1 cup quinoa pasta
- 15 ounces red beans
- 6 cups water
- 2 ounces beef bouillon
- 2 bay leaves
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1⁄4 teaspoon cayenne pepper
Directions
- 1. In stock pot, brown beef and garlic together in olive oil.
- 2. Remove fat.
- 3. Add the remaining ingredients.
- 4. Bring to boil.
- 5. Cover and simmer 30 minutes.
