Quinoa and Raspberry Flan

Ingredients
- 1⁄3 cup natural cane sugar
- 1⁄4 teaspoon fine sea salt
- 3 large eggs
- 1 1⁄4 cups milk
- 2 teaspoons lemon zest
- 1⁄2 cup quinoa
- 1 1⁄2 cups raspberries (or blackberries or blueberries)
Directions
- In large bowl, whisk together sugar, salt, eggs, milk and lemon zest until blended. Stir in quinoa flakes.
- Pour mixture into prepared baking dish and sprinkle with raspberries.
- Bake at 350 for 35-40 minutes or until set at center and golden. Let cool for 20 minutes before serving.
