Quicker Than the Original Delicious, Creamy, Potato Soup

Serves: 4-6
Ingredients
- 4 cups potatoes, shredded
- 1 1⁄2 cups chicken broth
- 2 tablespoons butter
- 3⁄4-1 teaspoon celery seed
- 1 cup chopped onion
- 2 tablespoons parsley, snipped
- 1⁄2 teaspoon salt
- 1 teaspoon season salt
- 1⁄4 teaspoon white pepper
- 1 teaspoon dill weed
- 3 dashes crushed red pepper flakes
- 1 cup milk
- 1 3⁄4 cups cream
- 8 ounces cream cheese
- crumbled bacon
- fresh snipped chives
- shredded cheddar cheese
Directions
- In a pan combine first 11 ingredients. Bring to a boil.
- Cover and simmer about 20 minutes.
- Add 1 cup milk.
- Add 1 3/4 cup cream.
- Add in 8 ounces cream cheese.
- Stir until combined and smooth.
- Return to boil then simmer until potatoes have finished cooking.
- Remove from heat.
- Garnish with bacon, chives and shredded cheddar.
