Quick Turkey Chili

I just threw this together one day and it turned out good so I thought I'd share!

  1. Brown ground turkey.
  2. Saute diced onions in 2 tablespoons olive oil over medium heat until just starting to soften. Add garlic and saute for one minute.
  3. Add Rotel tomatoes (I whiz mine up in the food processor).
  4. Add browned turkey and beans.
  5. Add hot water, bouillon cubes and seasonings. You can add more or less water to your liking.
  6. Simmer for 20 minutes.
  7. Sprinkle cornmeal over soup and stir in to thicken.
  8. Just before serving stir in chopped cilantro.
