Quick Tomato Sauce

Yields: 3 cups
Ingredients
- 1 tablespoon olive oil
- 1 cup chopped onion
- 1 large garlic clove, minced
- 1 (16 ounce) can plum tomatoes, coarsely chopped with juices
- 1⁄2 teaspoon dried basil, crumbled
- 1⁄4 teaspoon dried oregano, crumbled
- 1 bay leaf
- 1⁄4 teaspoon sugar
- 1⁄4 teaspoon salt

Directions
- In a saucepan over medium heat, warm oil. Add onion and garlic and saute until soft, about 5 minutes. Meanwhile, puree tomatoes and juices slightly in food processor. Add with tomato sauce, herbs, sugar, salt, and pepper to pan. Simmer, uncovered, stirring occasionally, until slightly thickened and flavors are blended, 10-12 minutes. Remove bay leaf and discard. Serve immediately or cover and refrigerate up to 1 week.
