Quick Spanish Chicken and Rice

A quick dish to put together when you don't want to be in the kitchen for long.

Serves: 4-6

Ingredients

  • 4 -6  frozen chicken breasts
  • 2  cups  jasmine rice (or rice of choice)
  • 14 cup green onion
  • 14 cup  white onion
  • 12 cup  olive (black or green halved)
  • 1  cup  shredded monterey jack cheese
  • 14 cup  chopped cilantro
  • 2 (1 1/4ounce) packages  taco seasoning
  • 2 14 cups water

Directions

  1. place frozen chicken breasts in pan.
  2. pour two cups of rice in around chicken.
  3. mix two packets taco seasoning with 2 1/4 cups water pour around chicken.
  4. add sliced olives, onion and cilantro.
  5. bake covered at 350 degrees 50 to 60 minutes.
  6. uncover top with shredded.
  7. cheese. serve with guacamole and sour cream.
