Quick Red Pepper and Cauliflower Cheese

Roasted red peppers, bacon and creme fraiche add a touch of class to this quickly-cooked, contemporary cauliflower cheese. Serve with garlic bread and a green salad. Show more

Ingredients

  •  salt and pepper
  • 1  large cauliflower, broken into large florets
  • 6  slices back bacon
  • 8 14 ounces  roasted red peppers, from a jar, drained and cut into strips
  • 78 cup creme fraiche
  • 6  ounces sharp cheddar cheese, coarsely grated
  •  garlic bread, to serve
  •  green salad, to serve

Directions

  1. Bring a pan of salted water to the boil. Add in the cauliflower and boil for 5-7 minutes, until just tender. Drain and tip into a shallow ovenproof dish.
  2. Preheat the broiler to high. Grill the bacon until crisp, then cut into large pieces, using kitchen scissors.
  3. Add half the bacon to the cauliflower, along with the red peppers and mix lightly.
  4. Mix together the creme fraiche and all but a handful of the cheese. Spread this mixture over the cauliflower mixture, then sprinkle over the remaining bacon and cheese.
  5. Broil for around 5 minutes until the top is bubbling and golden. Serve with garlic bread and a green salad.
