Quick Pickle Salad

Perfect summer salad, so light and refreshing! My MIL's recipe. Note: use only white sugar, not cane sugar. Also, "cook time" is refrigeration time. Show more

Directions

  1. Slice cucumbers thinly. Discard end pieces; place sliced cucumbers in large bowl with sealing lid.
  2. Slice onion thinly and add to bowl with cucumbers.
  3. Combine vinegar, water and sugar in large jar. Shake to combine. (This can be done in two batches if using a smaller jar.).
  4. Pour vinegar mixture over cucumbers and onion. Put sealing lid on bowl, shake to combine. Refrigerate overnight or at least 12 hours.
