Quick Mozzarella Beef Roll Ups

This recipe is modified from a Quick Cooking Magazine. I made and froze it with success. It is great for a quick dinner and many modifications could be done! Show more

  1. In a large skillet, cook ground beef, sausage, green pepper, and onion over medium heat until ground meat is no longer pink; drain. (Can use recipe #31008 All Purpose Ground Meat Mix if desired) Stir in pizza sauce, pepperoni, and oregano.
  2. Spoon about 1/2 cup meat mixture off-center on each tortilla; top each with a piece of mozzarella string cheese. Roll up burrito.
  3. style, place seam side down on an ungreased baking sheet.
  4. Bake at 350F for 10 minutes or until heated through and cheese is melted.
  5. *You may want to top with more pizza sauce!
  6. To Freeze: Assembly and freeze. Be sure to label.
  7. To Reheat: Thaw overnight and cook as directed.
