Quick Lentil Italian Tomato Soup

Ingredients
- 1 onion, chopped
- 1 garlic clove, crushed
- 1 tablespoon olive oil
- 1 cup red lentil, cooked
- 2 cups chicken or 2 cups vegetable broth
- 1 (19 ounce) can Italian-style stewed tomatoes, undrained and chopped
Directions
- Saute onion and garlic in olive oil until softened.
- Stir in remaining ingredients and bring to a boil.
- Cover and simmer for 10 minutes, stirring occasionally.
- Serve with a dollop of plain yogurt or sour cream and warm chole wheat pitas.
