Quick Italian Meatballs

Recipe from Cooking with Paula Deen magazine. Best meatballs ever.

Serves: 4-6

Ingredients

  • 1  tablespoon olive oil
  • 12 cup  finely chopped onion
  • 12 cup  finely chopped green bell pepper
  • 2  lbs  ground chuck
  • 36  pepperoni slices, finely chopped
  • 12 cup  Italian seasoned breadcrumbs
  • 12 cup  shredded parmesan cheese
  • 1  large egg, beaten
  • 1  teaspoon  dried Italian seasoning
  • 12 teaspoon  garlic salt
  • 2 (28 ounce) jars  marinara sauce

Directions

  1. In a large iron skillet, heat olive oil over medium heat. Add onion and bell pepper, and cook for 5-6 minutes or until veggies are soft.
  2. Let cool and then combine all ingredients except sauce and roll into 2 inch balls. Brown in same hot skillet until cooked on all sides. Transfer to simmering marinara sauce and gently cook for 2 hours. Before serving, I add a splash of half and half for richness.
