Quick Italian Chicken and Rice

This is a simple recipe that we use when we have no idea what to make for dinner. It only takes a few minutes to prepare and cook. Show more

Ingredients

  • 2  teaspoons  vegetable oil
  • 1 (12 -14 ounce) package  chicken breast tenders (not breaded)
  •  italian seasoning
  • 1 (14 ounce) can Italian-style diced tomatoes, un-drained
  • 34 cup water
  • 1 12 cups  uncooked Minute Rice

Directions

  1. In 10-inch nonstick skillet, heat oil over medium-high heat.
  2. Sprinkle chicken tenders on all sides with Italian seasoning; add to skillet.
  3. Cook 5 to 6 minutes, stirring constantly, until chicken is browned and no longer pink in center.
  4. Stir in tomatoes and water.
  5. Heat to boiling.
  6. Stir in Rice.
  7. Cover; remove from heat.
  8. Let stand 5 minutes or until liquid is absorbed.
