Quick Gnocchi

Ingredients
- 1 cup Betty Crocker potato buds, dry
- 1 cup boiling water
- 1 egg, beaten
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon ground black pepper
- 1 1⁄2 cups all-purpose flour
Directions
- place potatoes in a medium bowl.
- pour in boiling water.
- stir until well blended and let cool.
- stir in egg, salt and pepper.
- blend in flourto make a fairly stiff dough.
- turn dough onto a well floured surface.
- Knead lightly.
- divide dough into 1/2.
- shape each 1/2 into a long thin roll about the size of a breadstick.
- dip knife into flour and cut into bite sized pieces.
- Bring salted water to boil in a large pot.
- add a few gnocchi to boiling water.
- as gnocchi rises to surface remove with a slotted spoon.
- repeat until all cooked.
