Quick & Easy Coffee Cake

Ingredients
- 1⁄2 cup butter
- 1 cup granulated sugar
- 2 eggs
- 3 tablespoons vegetable oil
- 1 cup sour cream
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄2 cup brown sugar
- 1 1⁄2 teaspoons cinnamon
- 3⁄4 cup nuts, chopped or 3⁄4 cup cinnamon baking chips
- cooking spray or butter or oil
Directions
- Preheat oven to 350°F.
- Cream together butter and granulated sugar.
- Mix in eggs, sour cream, vegetable oil, and vanilla.
- Add dry ingredients and mix together.
- Combine brown sugar, cinnamon, and nuts or cinnamon chips.
- Spray Stoneware Baking Ring with cooking spray or brush with butter or oil and pour half the batter in the ring. Sprinkle half the filling/topping on top of the batter. Pour in remaining batter. Sprinkle remaining filling/topping on top.
- Bake for 40 to 45 minutes or until cake tester comes out clean. (Note: My oven only took 30 minutes.).
- Serve warm from pan or let stand until ring is cool to the touch and invert onto plate to serve.
