Quick & Creamy Potato Soup

Yields: 4 cups
Ingredients
- 6 slices bacon, chopped
- 1 small onion, chopped
- 2 1⁄2 cups cold water
- 1 (5 3/4ounce) package au gratin potato mix
- 2 cups cold milk
- 1 tablespoon chopped parsley
- 1 dash black pepper
- 2 green onions, finely chopped (optional)
Directions
- Cook bacon & onions in 3-qt saucepan. Drain & remove.
- Add water to saucepan; bring to boil. Add potatoes.
- Simmer over med heat 18 minute.
- Stir in the sauce mix that comes with the potatoes, milk, parsely, pepper, bacon and onions.
- Simmer for 4-5 more minutes; uses spoon or spatula to chop potato pieces while stirring.
- Garnish with chopped green onion if desired.
