Quick Chickpeas Salad

Ingredients
- 1 1⁄2 cups canned chick-peas, drained and rinsed
- 1 tablespoon Dijon mustard
- 3 tablespoons fresh lemon juice
- 3 tablespoons extra virgin olive oil
- 3 tablespoons red wine vinegar
- 2 garlic cloves, minced
- 1⁄2 cup chopped fresh parsley
- 1 cup thinly sliced red onion
- 1 red bell pepper, diced
- salt
- fresh ground black pepper
Directions
- In a large bowl, whisk together the mustard, lemon juice, olive oil and vinegar, stir in the garlic, parsley, onion and bell pepper.
- Gently toss the beans and dressing and season with salt and pepper to taste.
- Serve chilled or at room temperature.
