Quick Chicken Stir-Fry

Ingredients

  • 4  boneless skinless chicken breasts
  • 6  cups  uncle ben's  chicken rice pilaf mix, cooked
  • 1  clove garlic, minced
  • 1 (10 ounce) package  frozen mixed vegetables, broccoli green beans mushrooms & red peppers
  • 1  medium onion, cut into wedges
  • 13 cup  shredded carrot
  • 12 cup  bottled hoisin sauce

Directions

  1. PREP: Cut chicken into 3/4-inch pieces.
  2. CLEAN: Wash hands.
  3. COOK: Spray large nonstick skillet with nonstick cooking spray.
  4. Heat over medium-high heat.
  5. Add chicken and garlic; stir-fry 4 minutes.
  6. Add frozen vegetables, onion and carrots; stir-fry 3 minutes.
  7. Cover; cook 3 to 5 minutes or until vegetables are tender and internal juices of chicken run clear.
  8. (Or insert instant-read meat thermometer in thickest part of chicken. Temperature should read 170°F.) Stir in hoisin sauce.
  9. Heat thoroughly.
  10. SERVE: Serve chicken and vegetables over hot cooked rice.
  11. Garnish with fresh cilantro, if desired.
  12. CHILL; Refrigerate leftovers immediately.
