Quick Chicken-Fried Steak With Pan Gravy

Ingredients

  • 4 (6 ounce)  beef steaks, cubed
  • 12 cup flour
  • 4  tablespoons flour
  • 1  teaspoon salt, plus more to taste
  • 1  teaspoon black pepper, plus more to taste
  • 1  teaspoon paprika, plus more to taste
  • 1  cup  vegetable oil
  • 3  cups milk, divided

Directions

  1. Combine 1/2 C flour and 1 tsp salt, 1 tsp pepper and 1 tsp paprika on a plate.
  2. Stir with fork until well blended.
  3. Put 1/2 C milk in bowl.
  4. Dip steak in milk first, then coat generously with flour mixture.
  5. Heat oil in skillet until it reaches 375°F.
  6. Add steaks to skillet.
  7. Cook until seared and well crusted on one side, about 2 minutes.
  8. Turn steaks with tongs, cook 2 more minutes for medium.
  9. Transfer steaks to a plate. Keep warm.
  10. To prepare gravy, pour off all but 4 T cooking oil from pan.
  11. Return pan to medium heat.
  12. Whisk in remaining 4 T flour; cook 1 minute.
  13. Whisk in milk; cook until thick, 3 minutes.
  14. Add more milk if gravy becomes too thick.
  15. Season with salt, pepper, and paprika.
  16. Serve with steak and mashed potatoes.
