Quick Chicken Fried Rice

Ingredients
- 2 cups leftover cooked rice
- 2 eggs
- 1 cup leftover cooked chicken
- 1⁄2 cup French beans
- 1 spring onion
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons butter
- 2 sprigs fresh coriander
Directions
- Chop the Beans , Onion and Sprigs of Coriander.
- Break apart the leftover chicken pieces.
- Heat 1 tablespoon butter in a heavy based pan.
- Add the beans and onion.
- Saute for 2 mins and set aside.
- Add the remaining butter and the leftover rice and saute
- Add the salt and pepper while stirring.
- Break 2 eggs and scramble in the same pan and mix with the rice, while sautéing.
- add the shredded chicken and the veggies to the rice and stir for 2 minutes.
- Take off the heat and add the coriander sprigs for decoration.
- Serve hot.
