Quick Cajun-Style Skillet

I was in a hurry, and wanted something that that tasted home-made. I didn't want to spend a lot of time cooking, so I came up with this. Standing time is included in cook time. I know that this isn't real Cajun, but it's good. Show more

Serves: 6

Ingredients

  • 1 (15 1/2ounce) can  red beans, drained do not rinse
  • 1 (5 2/3ounce) package  lipton cajun sides rice and sauce mix (dirty rice mix)
  • 34 lb smoked sausage, diced
  • 2  cups water
  • 1  tablespoon butter or 1  tablespoon margarine
  • 4  tablespoons  cooking oil

Directions

  1. Over medium heat in a large skillet, heat oil.
  2. When oil is hot, add sausage.
  3. Cook until lightly browned.
  4. Add rest of ingredients.
  5. When mixture starts to boil, cover with lid.
  6. Reduce heat and simmer for 7 to 10 minutes, or until rice is tender.
  7. Remove from heat and let stand for 5 minutes.
  8. If desired serve with cornbread.
