Quick and Easy Twice Baked Potato!!!

These twice baked potatoes are so quick, and so easy!

Yields: 4 potato halves

  1. Place the potatoes on a microwavable plate, and heat on high for 5 minutes.
  2. Once the potatoes are done, cut them in half, scoop out the insides with a spoon, and place this in a medium-sized bowl.
  3. Add the cheese and stir until melted.
  4. Add the mayonnaise, butter, salt and pepper. Mix well.
  5. Using the same spoon, equally divide the insides between the 4 potato halves.
  6. Add some chives, if desired.
