Quick and Easy Salmon Cakes

Ingredients
- 1 cup boiling water
- 1 (6 ounce) package cornbread stuffing mix
- 3 eggs, slightly beaten
- 2 (6 ounce) cans salmon
- 1⁄4 cup oil (for frying)
Directions
- Add boiling water to stuffing mix and let stand 5 minutes.
- Mix eggs and salmon
- Add stuffing mix.
- Shape into patties.
- Cook about 5 minutes on each side until slightly browned.
