Quick Anchovy and Garlic Sauce

Serves: 2-4

Ingredients

  • 5  tablespoons butter
  • 1 (2 ounce) can  flat  anchovies packed in oil
  • 4  teaspoons  minced garlic (about 5-7 cloves)
  • 3  tablespoons olive oil
  • 13 cup  light cream
  •  grated parmesan cheese

Directions

  1. 1/2 pound pasta for 2 generous servings.
  2. Prepare the sauce while the pasta water is boiling.
  3. I like to use vermicelli.
  4. In a small skillet melt the butter.
  5. Add minced garlic.
  6. Cook until golden brown until it smells toasted.
  7. Do not let it scorch or it will taste bitter.
  8. When the garlic is golden brown, add the entire can of anchovies, including oil and the 3 tablespoons of olive oil.
  9. Cook and stir until the anchovies dissolve.
  10. If the pasta is not cooked yet, turn off the heat.
  11. When the pasta is cooked, finish the sauce.
  12. Add light cream to the sauce, and cook until it comes to a rolling boil.
  13. Pour over the well drained pasta and toss vigorously.
  14. Serve with parmesan cheese.
