Quiche Lorraine

Ingredients
- 1 (9 inch) pie shells, uncooked
- 1 1⁄4 cups half-and-half cream
- 1 tablespoon flour
- 3 eggs, whole
- 1 egg yolk
- 6 slices bacon, cooked & diced
- 1 cup swiss cheese, shredded
- 1⁄4 cup romano cheese, grated
- 1⁄8 cup fresh chives, chopped
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
Directions
- Start by mixing the flour with a little of the half & half until you get the lumps out.
- Add the rest of the half & half, 3 eggs, 1 egg yolk, salt & pepper to the bowl & mix with a whisk.
- Place the bacon pieces, chives & cheese in the pie shell & then pour the egg mixture on top.
- Preheat oven to 425 degrees.
- Bake for 5 minutes.
- Then lower oven temperature to 350 degrees & bake for 20 minutes.
