Quartet of Onions

Ingredients
- cooking spray
- 2 lbs sweet onions, sliced
- 1 small leek, thinly sliced (white part only)
- 4 ounces shallots, finely chopped
- 1⁄2 cup vegetable stock
- 1⁄2 cup green onion, sliced
- 1 -1 1⁄2 teaspoon dried mint
- 1⁄4 teaspoon dried sage
- salt and pepper
Directions
- Spray large skillet with cooking spray. Heat over medium until hot.
- Saute onions, leeks, shallots and green onions 3-4 minutes, stirring frequently.
- Stir in vegetable stock and heat to boiling.
- Reduce heat and simmer, covered, for 5 minutes.
- Stir in herbs and cook, uncovered, over medium-low until onion mixture is golden, about 15 minutes.
- Season to taste with salt and pepper.
