Punch a La Koets

This was published in a magazine that was featuring the chef Jennie Koets many years ago. Some of the ingredients have to be frozen so plan ahead. Double ingredients for a bigger party. A tasty punch. Show more

Yields: 7 cups

Ingredients

  • 2  cups water
  • 14 cup sugar
  • 12  ounces  unsweetened pineapple juice (1 1/2 cup)
  • 1  medium banana, mashed (1/2 cup)
  • 13 cup  frozen orange juice concentrate, thawed (1/2 of 6-oz can)
  • 13 cup  frozen lemonade concentrate, thawed (1/2 of 6-oz can)
  • 2  cups ginger ale, chilled

Directions

  1. In small saucepan, heat water and sugar till sugar dissolves.
  2. Cool then combine with pineapple juice, banana and concentrates.
  3. Pour into freezer containers; cover and freeze.
  4. Remove from freezer about one hour before serving. Thaw to slush stage; turn into punch bowl.
  5. Slowly pour ginger ale down side of bowl.
  6. Decorate top of punch with thinly sliced fresh lemons, if desired.
