Pumpkin White Chocolate Cookies

Ingredients
- 1 cup butter, softened
- 1⁄2 cup sugar
- 1⁄2 cup packed brown sugar
- 1 egg
- 2 teaspoons vanilla extract
- 1 cup pumpkin (not pie filling)
- 2 cups all-purpose flour
- 3 1⁄2 teaspoons pumpkin pie spice
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1⁄4 teaspoon salt
- 11 ounces white chocolate chips
Directions
- In a large bowl, cream butter and sugars until light and fluffy. Beat in the egg, vanilla and pumpkin. Combine dry ingredients; gradually add to the creamed mixture and mix well. Stir in white chocolate chips.
- Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets. Bake at 350° for 12-14 minutes or until firm. Remove to wire racks to cool.
