Pumpkin Streusel Muffins

Ingredients
Muffins
- 3 1⁄2 cups flour
- 1 cup packed brown sugar
- 1 tablespoon baking powder, plus
- 1 teaspoon baking powder
- 1 1⁄2 teaspoons cinnamon
- 1 teaspoon salt
- 1 teaspoon nutmeg
- 1 1⁄4 cups pumpkin
- 2 eggs, beaten
- 1 cup milk
- 2⁄3 cup vegetable oil
- 6 ounces cream cheese
Streusel Topping
- 1⁄2 cup packed brown sugar
- 1 teaspoon cinnamon
- 2 tablespoons butter
- 1⁄2 cup chopped walnuts
Directions
- Sift flour, brown sugar, baking powder, cinnamon, salt and nutmeg in a mixing bowl and set aside.
- In a large bowl, whisk together pumpkin, eggs, milk and oil. Add flour mixture and stir until moistened and combined.
- Fill muffin cups half full. Divide cream cheese into 24 small chunks and place one chunk in center of batter in each cup then top with remaining batter.
- Streusel: Combine first three ingredients and stir in walnuts. Sprinkle streusel over tops of muffins.
- Bake muffins in 375º preheated oven for 20-25 minutes.
