Pumpkin Spice Sugar Cookies

  1. In a medium bowl, whisk the flour, baking powder, and salt; set aside.
  2. With a hand or stand mixer, cream the butter, granulated sugar, and brown sugar at medium speed until light and fluffy, about 3 minutes. Scrape down the sides of the bowl with a rubber spatula as needed. Add the egg and vanilla; beat at medium speed until combined, about 30 seconds. Add the dry ingredients and beat at low speed until just combined, about 30 seconds.
  3. Roll dough into balls and flatten with the bottom of your hand or a glass.
  4. Bake in a pre-heated 375 degree oven for 10-12 minutes or until lightly browned and set. Frost if desired. Enjoy!
