Ingredients
- 2 1⁄2 cups whole wheat flour
- 1⁄2 cup sugar
- 3⁄4 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon allspice
- 2 teaspoons cinnamon
- 1 teaspoon ground ginger
- 1 (14 ounce) can pumpkin puree
- 2⁄3 cup applesauce
- 1 1⁄2 teaspoons lemon juice
- 1 1⁄2 teaspoons vanilla extract
- 1⁄2 cup dates
Directions
- Preheat oven to 375.
- Line muffin tins with papers.
- Mix dry ingredients.
- Add wet ingredients to dry and mix well, add a little water if too thick.
- Fold in dates.
- Bake for 25 minutes or until done.
