Pumpkin Roll

Ingredients
- 3 eggs
- 1 cup sugar
- 2⁄3 cup pumpkin
- 1 teaspoon lemon juice
- 3⁄4 cup all-purpose flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 2 teaspoons pumpkin pie spice
Filling
- 1 cup powdered sugar
- 1⁄4 cup butter, softened
- 8 ounces cream cheese
- 1⁄2 teaspoon vanilla
Directions
- Blend eggs on high for 5 minutes. Gradually, add sugar - beat well. Stir in pumpkin and lemon juice. Then add all dry ingredients. Bake in a greased and floured jelly roll pan at 375 degrees for 15 minutes.
- When cake is done, turn onto a kitchen towel that has been sprinkled with powder sugar. Roll up and let cool; then unroll and spread with the filling and roll back up. Keep in refrigerator.
