Pumpkin Raisin Muffins

Ingredients
- 2 cups brown rice flour
- 1 cup tapioca flour
- 1⁄2 cup sorghum flour
- 1⁄2 cup coconut flour
- 1 teaspoon xanthan gum
- 1 teaspoon allspice
- 2 teaspoons cinnamon
- 1 1⁄2 tablespoons baking powder
- 1 teaspoon salt
- 1 1⁄2 raisins
- 1 egg
- 1⁄4 cup egg white
- 1 cup brown sugar
- 1 cup orange juice
- 1 cup soymilk
- 1⁄4 cup vegetable oil
- 1⁄4 cup coconut oil
- 1 1⁄2 cups pumpkin puree
Directions
- Mix dry ingredients together in a large bowl. Mix wet ingredients in a separate smaller bowl. Stir wet into dry and mix until they just combined. Bake at 350C for 20 minutes or until done.
