Pumpkin (Or Applesauce) Pancake Mix for Xmas Gifts

  1. In a large bowl, mix milk, pumpkin, egg, oil and vinegar in 1 bowl.
  2. In another bowl, combine flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt. Stir into the pumpkin mixture just enough to combine. Let sit 5 minutes before cooking.
  3. Heat a lightly oiled griddle or frying pan over med-high heat.
  4. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve with butter and hot maple syrup.
