Pumpkin Oatmeal Muffins

These are a little dense, not quite light and fluffy, but that is because they are missing the oil and white flour. This dense texture works well with pumpkin though, almost reminds me of pumpkin pie. You could also candy up some pecans to add to the top. Show more

  1. 1. Preheat oven to 350°F.
  2. 2. Mix first 5 ingredients in a large bowl.
  3. 3. In a separate bowl, combine the remaining ingredients.
  4. 4. Slowly fold the dry ingredients into the wet.
  5. 5. Grease muffin tins and back for 20-25 minutes.
