Pumpkin Oatmeal Muffins

Ingredients
- 1 cup whole wheat flour
- 1⁄2 cup flour
- 1 cup quick oats
- 1 1⁄2 teaspoons baking soda
- 2 teaspoons pumpkin pie spice
- 1⁄3 cup molasses or 1⁄3 cup honey
- 2 egg whites, slightly beaten
- 1⁄2 cup skim milk
- 1 cup pumpkin puree
- 1⁄3 cup unsweetened applesauce
- 1⁄2 banana, ripe and mashed
Directions
- 1. Preheat oven to 350°F.
- 2. Mix first 5 ingredients in a large bowl.
- 3. In a separate bowl, combine the remaining ingredients.
- 4. Slowly fold the dry ingredients into the wet.
- 5. Grease muffin tins and back for 20-25 minutes.
