Pumpkin Cookies

Ingredients
- 1 cup boiling water
- 1 cup dried pumpkin, powder
- 1⁄2 cup butter
- 1 cup sugar (cane juice nice)
- 1 egg
- 1 teaspoon vanilla
- 2 cups whole wheat pastry flour
- 1⁄2 teaspoon sea salt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 2 cups chopped dried peaches or 2 cups apricots or 2 cups sometime i use white choc chips
Directions
- Pour boiling water over pumpkin powder. Let soak for 30-45 minute
- Cream butter and cane juice til fluffy.
- Add egg and vanilla, blending thoroughly.
- In another bowl, combine flour, salt, baking powder, baking soda, and cinnamon. Add chopped dried fruit. Add pumpkin mixture to creamed mixture.
- Add dry mix to creamed mix 1 c at a time beating well after each addition. Drop by spoonfuls onto greased cookie sheets and bake at 350 for 12-15 minute.
