Pumpkin Cookies

Ingredients
For Cookies
- 1 cup shortening
- 2 cups sugar
- 2 cups canned pumpkin puree
- 2 eggs
- 4 cups flour
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 2 teaspoons baking soda
Frosting
- 1⁄2 cup butter
- 1 (8 ounce) package cream cheese
- 1 teaspoon vanilla
- 5 -6 cups powdered sugar
Directions
- Cream sugar and shortening until fluffy, Add pumpkin. Add eggs one at a time. Mix until well combined.
- Meanwhile, mix dry ingreadients together.
- Add dry ingreadients to the wet in 3 incroments.
- Drop cookie dough onto a parchment lined baking sheet and bake at 375 degrees for 12 minutes.
- For the frosting:.
- Cream butter and cream cheese together.
- Once creamy add vanilla and powdered sugar until it reaches the right consistancy for spreading.
