Pumpkin Cookies

Ingredients
- 1⁄2 cup shortening
- 1 cup granulated sugar
1 cup cooked pumpkin (fresh or canned) NOTE
- if using fresh pumpkin, put through a sieve first to drain
- 1 teaspoon vanilla
- 1⁄4 teaspoon salt
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 cup raisins
- 1⁄2 cup nuts, chopped
Directions
- In a large bowl, cream shortening and sugar together thoroughly. Stir in pumpkin, vanilla and salt.
- Sift together flour, baking soda, baking powder and cinnamon; gradually add to the pumpkin mixture. Fold in nuts and raisins. Drop by teaspoonfuls onto greased cookie sheet.
- Bake at 350F for 10-12 minutes, or until golden brown.
