Ingredients
- 1 1⁄2 cups butter, softened
- 2 cups brown sugar, packed
- 1 cup sugar
- 1 (15 ounce) can pumpkin
- 1 egg
- 1 teaspoon vanilla extract
- 4 cups flour
- 2 cups quick-cooking oatmeal
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoon salt
Directions
- In large misxing bowl, cream butter and sugars.
- Beat in remaining ingredients gradually.
- Crop by tablespoons onto ungreased baking sheets.
- Bake at 350 degrees F for 10-12 minutes or until lightly browned.
