Pumpkin Cookies

Ingredients
Cookies
- 1 cup shortening
- 1 cup canned pumpkin
- 1 cup sugar
- 1 egg
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
Icing
- 3 tablespoons butter
- 4 teaspoons milk
- 1⁄2 cup brown sugar
- 1 cup powdered sugar
- 3⁄4 teaspoon vanilla
Directions
- Icing (Make first):.
- Heat the butter, milk, and brown sugar together in a saucepan until smooth and melted.
- Let cool slightly and mix in the powdered sugar and vanilla.
- Set aside.
- Cookies:.
- Cream together with a mixer the shortening, canned pumpkin, sugar, and the egg.
- Mix in the flour, baking soda, salt, and cinnamon till smooth.
- Drop by spoonful on a greased cookie sheet.
- Bake in 375 degree oven for 10-12 minutes.
- Spread the icing on the warm cookies.
