Ingredients
- 3⁄4 cup sugar
- 1⁄2 cup brown sugar
- 1 cup butter or 1 cup margarine, softened
- 1 cup canned pumpkin
- 1 teaspoon vanilla
- 1 egg
- 2 cups whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
Directions
- Preheat oven to 350 degrees.
- In a large bowl, beat sugars and butter together until evenly distributed. Add pumpkin, vanilla, and egg and blend well. Slowly incorporate dry ingredients. Drop dough 2 inches apart on ungreased cookie sheets.
- Bake for 16 minutes or until golden brown.
