Pumpkin Cookies

A recipe from my uncle has been much loved by my family for years. Perfect if you bought too many pumpkins at halloween!

Ingredients

• 1⁄2 cup shortening
• 1  cup sugar
• 1⁄2 cup brown sugar
• 2  eggs
• 1 1⁄2 cups  fresh cooked pumpkin
• 1  teaspoon lemon juice
• 2 1⁄2 cups flour
• 1⁄4 teaspoon ginger
• 2  teaspoons baking soda
• 1⁄2 teaspoon baking powder
• 1  teaspoon cinnamon
• 1⁄2 teaspoon nutmeg
• 1  cup  nuts (optional) or 1  cup chocolate (optional)

Directions

1. Cream together the first 6 ingredients. Add dry ingredients and mix well.
2. Drop by the teaspoonful onto greased cookie sheets. Bake 12-15 minutes at 375°F.
