Pumpkin Chili

Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 garlic clove, chopped
- 1 tablespoon ground cumin
- 1⁄2 tablespoon chili powder
- 1 teaspoon sugar
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon ground cinnamon
- 1⁄2 teaspoon unsweetened cocoa powder
- 15 ounces cannellini beans, drained and rinsed
- 15 ounces black beans, drained and rinsed
- 32 ounces diced tomatoes
- 16 ounces pumpkin
- 4 ounces green chilies, chopped
- 24 ounces beer
Directions
- Sweat onions in the oil on medium-low heat until they become transparent (approximately 10 minutes).
- Add garlic and dry spices.
- Saute for 2 minutes.
- Add remaining ingredients and mix throughly.
- Bring to boil, reduce head and simmer for 1 hour.
