Pumpkin Bread With Cranberries

Ingredients
- 3 1⁄2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 1⁄2 teaspoons salt
- 2 teaspoons cinnamon
- 2 teaspoons nutmeg
- 3 cups sugar
- 4 eggs, beaten
- 2 cups pumpkin puree
- 1 tablespoon lemon zest
- 1 tablespoon orange juice
- 1⁄2 cup water
- 1⁄2 cup dried cranberries
- 1 cup vegetable oil
Directions
- Preheat oven to 350.
- Lightly butter two 9"x5" loaf pans.
- In a large mixing bowl, combine flour, soda, salt, cinnamon, nutmeg and sugar.
- Add eggs, water, oil, lemon zest, orange juice and pumpkin.
- Stir until blended.
- Add cranberries.
- Mix well.
- Pour into loaf pans.
- Bake 1 hour.
- Cool for about 10 minutes.
- Remove from pans and let cool on a rack.
