Pumpkin-Bran Muffins

Yields: 8 muffins
Ingredients
- 1 cup flour
- 2 tablespoons vegetable oil
- 1⁄2 cup natural bran
- 1⁄2 cup pumpkin, canned or cooked
- 1 tablespoon sugar
- 1 egg
- 2 teaspoons baking powder
- 3⁄4 cup orange juice
- 1⁄2 teaspoon baking soda
- 1⁄3 cup raisins
- 1⁄2 teaspoon ground cinnamon
- 1 tablespoon wheat germ
Directions
- Combine all the ingredients, except the wheat germ, in a mixing bowl.
- Stir to blend.
- Spoon into lightly oiled muffin tins (or paper baking cups sprayed with non-stick spray, my choice.) Sprinkle on the wheat germ.
- Bake in a 400 degree oven for 10 to 15 minutes or until lightly browned.
